Ingredients for 6
8 lb roast ,ribs removed
2 rosemary sprigs
4 thyme sprigs
Tablespoon garlic
Tablespoon black pepper
2 Tablespoons sea salt
Directions

Step 1
Set your Anova Sous Vide Precision Cooker to 145ºF / 62.8ºC

Step 2
Rub roast with garlic,pepper and salt. Put roast ,rosemary and thyme in bag.

Put in Sous Vide.

After 12 hours remove roast, pat dry. Coat with mayonnaise and hickory seasoning mix.

Grill over mesquite charcoal till a nice crust is developed.

Final result is still pink inside and close to being charred outside. Meat is very tender at this point.
