Step 1
Salt and pepper the steak, vacuum seal. Pretty simple.

Cook for 3-4 hours at your preferred temperature. I cooked mine at 132 degrees Fahrenheit for 3 hours.

Take it out, drain the juices (can save for later) and pat dry. I re-season with salt and pepper and a little rub (I used Special Ops - brisket).

Sear in a cast iron pan or your choice of searing options. Hot pan, some folks like to sear with mayo (I love it, but the smoke indoors may be too much). I used a little oil and butter to get a good crust.

Cut, plate and enjoy.
