  • Favorite rub - meat church holy gospel

  • Liquid smoke

Directions

  • Step 1

    Slice and rub. Can use olive oil or mustard as base before rub

  • Step 2

    Smoke with apple chips unti internal temp of 145

  • Step 3

    Remove from smoke, rerub, bag, tablespoon liquid smoke

  • Step 4

    145/6 hours in sous vide
