Ingredients for 1

  • 2 lbs pork roast

  • Salt, Pepper

  • Garlic

  • Shalots

  • Rosemary

  • Basil

  • 2 tbsp Butter

Directions

  • Step 1

    Set your Anova Sous Vide Precision Cooker to 138.5ºF / 59.2ºC.

  • Step 2

    Pat dry pork roast

  • Step 3

    Rub in salt, pepper, garlic

  • Step 4

    Place in bag and add sliced shalots, Rosemary, basil, 1 tbsp butter

  • Step 5

    Insert in water bath and seal, cook for 3 hrs

      Remove from water and pat dry

    • Step 1

      Add salt to all sides

    • Step 2

      Heat oil in pan to high heat

    • Step 3

      Slice fat side of roast an inch apart and 1/4” deep

    • Step 4

      Sear in hot oil 2 min each side

    • Step 5

      Add 1 tbsp butter in pan and put melted butter on roast as you finish searing

    • Step 6

      Remove from pan and let rest for 5 min

    • Step 7

      Slice and serve
