Ingredients for 6

  • Pork Rack 4 rib frenched

  • Sugar 2T

  • Salt 2T

Directions

  • Step 1

    Set your Anova Sous Vide Precision Cooker to 58ºC / 136.4ºF

  • Step 2

    Rub sugar and salt all over.

  • Step 3

    Place in plastic bag. And sous vide for 6 hours at 58℃

  • Step 4

    When the sous vide is completed drain the juice and pat dry the pork rack. Chill the pork rack.

  • Step 5

    Turn on oven with grill and fan at 260℃ when 2 hour before serving. After 45 minutes preheat, place the pork rack into the oven with fan heat only for 15 minutes. After that turn on the grill and check every 5 minutes for a cracking finish.
