2.5# pork loin roast
Kosher Salt
Pepper
Dry Pork Rub
Directions

Step 1
Set your Anova Sous Vide Precision Cooker to 137.0ºF / 58.3ºC.

I dried off my roast with paper towels and liberally seasoned it with salt and pepper from up high.

Vacuum seal the roast

Sous vide 4-5 hours at 137 degrees

Remove from the water bath, dry with paper towels.

Step 6
Heat a cast iron pan until it’s Smoking. I had CHI or other high temperature oil. So you’re the pork roast on all four sides for one minute each.

Step 7
Remove for the pan and let it rest 5 to 10 minutes. Slice and serve

Grill or sear for 1 minute on high heat.
