  • Salt 1/4 cup

  • Brown sugar 1/4 cup

  • Paprika 1/4 cup

  • Garlic powder 1 tbsp

  • Onion powder 1 tbsp

  • Black pepper 1 tbsp

  • 4 or 5 medium size pork Knuckles

Directions

  • Step 1

    Set your Anova Sous Vide Precision Cooker to 167.0ºF / 75.0ºC.

  • Step 2

    Add the mix to the pork Knuckles

  • Step 3

    After cooking for 24 hours, sprinkle salt on the skin and leave it in the refrigerator for 12 to 24 hours to make the skin crisp

  • Step 4

    Roast it in the oven for 1 hour
