Ingredients for 2

  • 4 Pork Chops about 1/2 inch thick

  • 1 Lemon

  • 4 Cloves Garlic Crushed

  • 1/2 Tsp Paprika

  • 1/2 Tsp Dried Oregano

  • 1/2 Tsp Dried Parsley

  • 1/2 Tsp Cumin

  • 3 Sprigs Fresh Thyme

  • 1 Bay Leaf

  • 1 Tbsp Olive Oil

  • Pink Himalayan Sea Salt to Taste

  • Pink Peppercorn to Taste

  • 1 Dried Chili Pepper Crushed

Directions

  • Step 1

    Set your Anova Sous Vide Precision Cooker to 140.0ºF / 60.0ºC.

  • Step 2

    Rinse and pat dry the pork chops

  • Step 3

    Mix dry ingredients in small bowl

  • Step 4

    Cover both sides of each pork chop with the dry rub and pat gently into meat

  • Step 5

    Place pork chops in bag

  • Step 6

    Cut lemon in half. Squeeze juice off half of lemon into bag

  • Step 7

    Cut remaining half of lemon into four slices and place on top of each pork chop

  • Step 8

    Add crushed garlic, thyme, bay leaf and olive oil to bag

  • Step 9

    Close bag and shake

  • Step 10

    Remove air

  • Step 11

    Place in Sous Vide bath

    • Step 0

      Remove pork chops from bag. Set bag with juices aside.

    • Step 1

      Heat a cast iron skillet with some olive oil

    • Step 2

      When hot sear the pork chops on each side approximately 2-4 minutes

    • Step 3

      Pour liquids from bag into pan approximately 1 minute before searing 2nd side of last pork chop.

    • Step 4

      Plate and drizzle sauce on top
