Sous Vide Lemon Herb Pork Chops

  1. Set your Anova Sous Vide Precision Cooker to 140.0ºF / 60.0ºC.
  2. Rinse and pat dry the pork chops
  3. Mix dry ingredients in small bowl
  4. Cover both sides of each pork chop with the dry rub and pat gently into meat
  5. Place pork chops in bag
  6. Cut lemon in half. Squeeze juice off half of lemon into bag
  7. Cut remaining half of lemon into four slices and place on top of each pork chop
  8. Add crushed garlic, thyme, bay leaf and olive oil to bag
  9. Close bag and shake
  10. Remove air
  11. Place in Sous Vide bath

  1. Remove pork chops from bag. Set bag with juices aside.
  2. Heat a cast iron skillet with some olive oil
  3. When hot sear the pork chops on each side approximately 2-4 minutes
  4. Pour liquids from bag into pan approximately 1 minute before searing 2nd side of last pork chop.
  5. Plate and drizzle sauce on top
