Sous Vide Lemon Herb Pork Chops

Ingredients
- 4 Pork Chops about 1/2 inch thick
- 1 Lemon
- 4 Cloves Garlic Crushed
- 1/2 Tsp Paprika
- 1/2 Tsp Dried Oregano
- 1/2 Tsp Dried Parsley
- 1/2 Tsp Cumin
- 3 Sprigs Fresh Thyme
- 1 Bay Leaf
- 1 Tbsp Olive Oil
- Pink Himalayan Sea Salt to Taste
- Pink Peppercorn to Taste
- 1 Dried Chili Pepper Crushed
Directions
- Set your Anova Sous Vide Precision Cooker to 140.0ºF / 60.0ºC.
- Rinse and pat dry the pork chops
- Mix dry ingredients in small bowl
- Cover both sides of each pork chop with the dry rub and pat gently into meat
- Place pork chops in bag
- Cut lemon in half. Squeeze juice off half of lemon into bag
- Cut remaining half of lemon into four slices and place on top of each pork chop
- Add crushed garlic, thyme, bay leaf and olive oil to bag
- Close bag and shake
- Remove air
- Place in Sous Vide bath
- Remove pork chops from bag. Set bag with juices aside.
- Heat a cast iron skillet with some olive oil
- When hot sear the pork chops on each side approximately 2-4 minutes
- Pour liquids from bag into pan approximately 1 minute before searing 2nd side of last pork chop.
- Plate and drizzle sauce on top
