Ingredients for 1

Salt, pepper (generous)
Very light sprinkle of Montreal steak seasoning
—- APPLE TOPPING —-
Pork Drippings from Sous vide bag (use a strainer)
1 honey crisp apple (loose chop)
1 medium onion (loose chop)
2 cloves fresh garlic (minced)
Spicy brown mustard 1/2 tsp
1.5 tbsp brown sugar
2/3 c Hard Apple Cider (beer)
Directions

Step 1
Set your Anova Sous Vide Precision Cooker to 135.0ºF / 57.2ºC.

Cook for 3 hrs 15 min

Step 3
Place all apple topping ingredients in saucepan or skillet and cook down to a reduction. Strain any leftover pork drippings from Sous vide bag and add to sauce.

After Sous vide is done, finish searing on stovetop. Pour 2 tbsp of oil in hot skillet and sear for a minute or 2 until you see a light brow sear. Place on platter lightly covered with foil (vent). Let rest for 5 min and top with Apple mixture before serving.
