Ingredients
- —- MARINADE —-
- Salt, pepper (generous)
- Very light sprinkle of Montreal steak seasoning
- —- APPLE TOPPING —-
- Pork Drippings from Sous vide bag (use a strainer)
- 1 honey crisp apple (loose chop)
- 1 medium onion (loose chop)
- 2 cloves fresh garlic (minced)
- Spicy brown mustard 1/2 tsp
- 1.5 tbsp brown sugar
- 2/3 c Hard Apple Cider (beer)
Directions
- Set your Anova Sous Vide Precision Cooker to 135.0ºF / 57.2ºC.
- Cook for 3 hrs 15 min
- Place all apple topping ingredients in saucepan or skillet and cook down to a reduction. Strain any leftover pork drippings from Sous vide bag and add to sauce.
- After Sous vide is done, finish searing on stovetop. Pour 2 tbsp of oil in hot skillet and sear for a minute or 2 until you see a light brow sear. Place on platter lightly covered with foil (vent). Let rest for 5 min and top with Apple mixture before serving.
