Ingredients for 4
4 Prime or better New York strip steak
Sea salt or kosher salt
Freshly ground black pepper
Garlic powder
1 ½ Tbsp beef tallow
Directions

Step 1
Generously season all sides of the steaks with sea salt or kosher salt, freshly ground black pepper, and garlic powder.

Vacuum seal.

Step 3
Cook sous vide at 125°F (51.7°C) for one hour.

Finishing Steps

Step 0
Remove steaks from sous vide and allow to rest in freezer for 20 to 30 minutes prior to finishing.

Step 1
Pan sear in cast iron skillet, pre-heated over high heat, generously coated with beef tallow for 3 to 4 minutes per side.

Step 2
Allow me to rest for 10 minutes prior to serving
