Ingredients for 4

  • Salt

  • Pepper

  • Finely ground Coffee (dark roast)

  • Rosemary

  • Ground Red pepper

Directions

  • Step 1

    Set your Anova Sous Vide Precision Cooker to 132.0ºF / 55.6ºC.

  • Step 2

    Remove roast from freezer and let it thaw in the fridge. Rub meat liberally with dry rub mix, and place it in a sealed bag.

  • Step 3

    Place bag in the water with Anova.

  • Step 4

    Cook roast in water for 24 hours at 132 degrees.

  • Step 5

    Remove meat. Heat a skillet with butter on it and sear meat for 1 minute on each side.

  • Step 6

    Remove meat from heat and let cool for 5 minutes, slice and serve!
