Medium Rare Steak
Ingredients for 2
2 Ribeye steaks
4 Tbsp Butter
3 Garlic cloves
Set your Anova Sous Vide Precision Cooker to 129.0ºF / 53.9ºC.
Season steaks with salt and pepper.
Smash garlic cloves and rub on steaks. Place steaks in bag with thyme and 2 tbsp butter.
When Anova gets to temp place bag into water using water immersion technique.
With 10 minutes remaining heat grill to highest setting with cast iron pan inside.
When steaks have finished remove from bag and pat dry. Season again with salt and pepper. Cover in corn starch for a better crust.
Brush a tbsp of canola oil onto pan and let heat until smoking.
Place steaks onto pan and cook for 2-3 minutes on each side or until you see a nice crust.
Remove from pan and place onto wire rack to rest for 5 minutes.
