Ingredients for 4

  • 1.25 lb London broil less than 1” thick

  • 1/2 tsp each pepper, garlic powder, and oregano

  • 1 tsp Diamond kosher salt

  • 2 sprigs each rosemary and thyme

  • 2 Tbls Butter for finish

Directions

  • Step 1

    Rub beef with salt, pepper, garlic powder and oregano. Place in bag with fresh herb sprigs. Vacuum seal and submerge in 131 degrees for 7 hours

      Heat cast iron skillet to high with 2 Tbls butter. Remove beef from bag and pat dry. Sear on one side 2 minutes, flip and sear for 1 more minute. Let sit for 10 minutes and slice thinly across the grain.
