  1. Rub beef with salt, pepper, garlic powder and oregano. Place in bag with fresh herb sprigs. Vacuum seal and submerge in 131 degrees for 7 hours

Finishing Steps

  1. Heat cast iron skillet to high with 2 Tbls butter. Remove beef from bag and pat dry. Sear on one side 2 minutes, flip and sear for 1 more minute. Let sit for 10 minutes and slice thinly across the grain.
