Ingredients
- 1.25 lb London broil less than 1” thick
- 1/2 tsp each pepper, garlic powder, and oregano
- 1 tsp Diamond kosher salt
- 2 sprigs each rosemary and thyme
- 2 Tbls Butter for finish
Directions
- Rub beef with salt, pepper, garlic powder and oregano. Place in bag with fresh herb sprigs. Vacuum seal and submerge in 131 degrees for 7 hours
Finishing Steps
- Heat cast iron skillet to high with 2 Tbls butter. Remove beef from bag and pat dry. Sear on one side 2 minutes, flip and sear for 1 more minute. Let sit for 10 minutes and slice thinly across the grain.
