  • Lamb loin chops

  • Salt

  • Pepper

  • Garlic powder

Directions

  • Step 1

    Season lamb loin chops with salt, pepper and garlic powder.

  • Step 2

    Vacuum seal and let marinade for at least 24 hours.

  • Step 3

    Set water bath at 55°C/131°F and place lamb in water bath.

      Dry lamb with some paper towels

    • Step 1

      Get a good sear on the meat. This was done in the oven on the maximum grill setting. A good sear can also be achieved on a hot skillet, blow torch, or over hot coals to get a bit of smoke flavour.
