- 2 Filet Mignon 1 &1/2 inches thick 
- Salt 
- Pepper 
- 3 cloves garlic crushed 
- 2 tablespoons unsalted butter 
- 3 cloves garlic minced 
- 1/2 shallot minced 
- 2 ounces red wine 
- 2 tablespoons virgin olive oil 
Directions
- 
                              Step 1Salt and pepper filets and place in plastic bag with crushed garlic 
- 
                              Step 2Set temperature to 139 degrees for one hour 45 minutes 
- 
                              Step 3Remove from plastic. Reverse sear in hot olive oil for 90 seconds on each side 
- 
                              Step 4Remove to serving plate and melt butter in skillet. Add in shallot/garlic and wine. Reduce to desired consistency. 
- 
                              Step 5Pour over steak and serve.
