  1. Salt and pepper filets and place in plastic bag with crushed garlic
  2. Set temperature to 139 degrees for one hour 45 minutes
  3. Remove from plastic. Reverse sear in hot olive oil for 90 seconds on each side
  4. Remove to serving plate and melt butter in skillet. Add in shallot/garlic and wine. Reduce to desired consistency.
  5. Pour over steak and serve.
