Ingredients for 0
1 goose breast
1 slice of orange cut into half
Salt and pepper
2 cloves
Fresh herbs according to taste (thyme, rosemary, coriander, etc)
Directions

Step 1
1. Fill a medium to large sized pot with water and heat to 57 degrees Celsius

2. Using sharp knife make various cuts cross the fat without cutting into meat.

3. Season breast with salt and pepper, then place the cloves and orange slices on top. Add some fresh herbs according to taste.

4. Place everything into a vacuum sealer bag, remove air and seal

5. Place bag into preheated pot and set timer for two hours. After cooking, remove breast from bag and place on paper towel to dry.

6. Add oil to a frying pan and heat to medium-high. Sear breast on both sides until golden brown.

7. Set the breast aside for 5 minutes and them cut into very thin slices.
