Ingredients
- 1 goose breast
- 1 slice of orange cut into half
- Salt and pepper
- 2 cloves
- Fresh herbs according to taste (thyme, rosemary, coriander, etc)
Directions
- 1. Fill a medium to large sized pot with water and heat to 57 degrees Celsius
- 2. Using sharp knife make various cuts cross the fat without cutting into meat.
- 3. Season breast with salt and pepper, then place the cloves and orange slices on top. Add some fresh herbs according to taste.
- 4. Place everything into a vacuum sealer bag, remove air and seal
- 5. Place bag into preheated pot and set timer for two hours. After cooking, remove breast from bag and place on paper towel to dry.
- 6. Add oil to a frying pan and heat to medium-high. Sear breast on both sides until golden brown.
- 7. Set the breast aside for 5 minutes and them cut into very thin slices.

- Serve with side dish of your choice
