Ingredients for 0
4 lb fresh ham roast
1 orange, peeled and torn into 4 pieces
1 yellow onion, peeled and cut into 6 pieces
8 garlic cloves, peeled
1 bay leaf
1 tablespoon dried oregano
1 tablespoon dried thyme
1 tablespoon chili powder
1/2 tablespoon salt
1/2 tablespoon whole peppercorns
1/2 tablespoon ground pepper
1 teaspoon cinnamon
1 teaspoon cumin
1 teaspoon cayenne pepper

Step 1
Add all ingredients together with ham toast into a bag, ready for the sous vide. Leave in fridge until the sous vide is ready.

Set sous vide up and add ham and wait patiently for 24-36 hours.

Serve as tacos with quick pickled red onion (in apple cider vinegar), sliced Serrano peppers, shredded red cabbage, lime wedges, salsa, and fresh cilantro.

Pat meat dry and cut into cubes (about 1.5 in wide). Sear on all sides in a cast iron pan or broil in the oven for 5-7 min.
