Fresh Ham Carnitas
Recipe 2 - Carnitas made with fresh ham. Can substitute pork shoulder. Meant to make carnitas that are cubed, not very shreddable.

Ingredients
- 4 lb fresh ham roast
- 1 orange, peeled and torn into 4 pieces
- 1 yellow onion, peeled and cut into 6 pieces
- 8 garlic cloves, peeled
- 1 bay leaf
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- 1 tablespoon chili powder
- 1/2 tablespoon salt
- 1/2 tablespoon whole peppercorns
- 1/2 tablespoon ground pepper
- 1 teaspoon cinnamon
- 1 teaspoon cumin
- 1 teaspoon cayenne pepper
Directions
- Add all ingredients together with ham toast into a bag, ready for the sous vide. Leave in fridge until the sous vide is ready.
- Set sous vide up and add ham and wait patiently for 24-36 hours.
- Serve as tacos with quick pickled red onion (in apple cider vinegar), sliced Serrano peppers, shredded red cabbage, lime wedges, salsa, and fresh cilantro.
Finishing Steps
- Pat meat dry and cut into cubes (about 1.5 in wide). Sear on all sides in a cast iron pan or broil in the oven for 5-7 min.
