Can’t go wrong at 129° for a full ~1.5lb flatiron steak. Have done this a few times: 1hr is good, 2 hours is great. 3hrs is insane. Once cooked let it rest for 5min and sear over high heat until desired crust, about 1-2min per side. Let rest 5min. Slice against grain. Serve.

  • 1.25lb - 1.75lb flatiron steak

  • Salt to taste

  • Pepper to taste

  • 1-2tbsp high heat oil ( i.e. avocado ) for pan sear

  • 2tbsp ghee (optional)

  • Step 1

    Season meat how you like it

  • Step 2

    Add ghee - optional

  • Step 3

    Vacuum seal

  • Step 4

    Cook 2hrs at 129°

  • Step 5

    Remove and let rest 5min

      Sear in pan on med high heat with light oil for 1-2min per side until browned

      Ut against grain and serve
