Reverse seared Flatiron steak

Can’t go wrong at 129° for a full ~1.5lb flatiron steak. Have done this a few times: 1hr is good, 2 hours is great. 3hrs is insane. Once cooked let it rest for 5min and sear over high heat until desired crust, about 1-2min per side. Let rest 5min. Slice against grain. Serve.

  2. Add ghee - optional
  3. Vacuum seal
  4. Cook 2hrs at 129°
  5. Remove and let rest 5min

Finishing Steps

  1. Sear in pan on med high heat with light oil for 1-2min per side until browned
  2. Let rest 5min
  3. Ut against grain and serve
