Reverse seared Flatiron steak
Can’t go wrong at 129° for a full ~1.5lb flatiron steak.
Have done this a few times: 1hr is good, 2 hours is great. 3hrs is insane.
Once cooked let it rest for 5min and sear over high heat until desired crust, about 1-2min per side.
Let rest 5min. Slice against grain. Serve.

Ingredients
- 1.25lb - 1.75lb flatiron steak
- Salt to taste
- Pepper to taste
- 1-2tbsp high heat oil ( i.e. avocado ) for pan sear
- 2tbsp ghee (optional)
Directions
- Season meat how you like it
- Add ghee - optional
- Vacuum seal
- Cook 2hrs at 129°
- Remove and let rest 5min
Finishing Steps
- Sear in pan on med high heat with light oil for 1-2min per side until browned
- Let rest 5min
- Ut against grain and serve
