Garlic-Herb Butter Filet Mignon

Ingredients for 2
2 (8 to 10-ounce) filets mignons, or 4 petit filets
2 Tbsp. salted butter, softened
1 Tbsp. minced garlic
2 tsp. dried rosemary
1 tsp. dried thyme
1/4 tsp. fresh-ground black pepper

Step 1
Remove filets from refrigerator and allow to sit at room temperature while preparing garlic-herb butter.

Step 2
In a small bowl, stir together butter, garlic, herbs and pepper. Cover and allow to sit 10 minutes.

Pat filets dry with paper towels. Spread top and bottom of each filet with the seasoned butter mixture and place in bag. Vacuum air out of bag and seal.

Step 4
Cook at 133° F for 2 hours for medium-rare (or 132° for rare).

Finishing Steps

Heat grill to high for at least 10 minutes.

Step 1
Remove filets from bag and pat dry with paper towels. Sear on grill for 2 minutes per side.

Remove filets from grill, cover with aluminum foil and allow to rest for 5 to 10 minutes before serving.
