Garlic-Herb Butter Filet Mignon

Ingredients
- 2 (8 to 10-ounce) filets mignons, or 4 petit filets
- 2 Tbsp. salted butter, softened
- 1 Tbsp. minced garlic
- 2 tsp. dried rosemary
- 1 tsp. dried thyme
- 1/4 tsp. fresh-ground black pepper
Directions
- Remove filets from refrigerator and allow to sit at room temperature while preparing garlic-herb butter.
- In a small bowl, stir together butter, garlic, herbs and pepper. Cover and allow to sit 10 minutes.
- Pat filets dry with paper towels. Spread top and bottom of each filet with the seasoned butter mixture and place in bag. Vacuum air out of bag and seal.
- Cook at 133° F for 2 hours for medium-rare (or 132° for rare).
Finishing Steps
- Heat grill to high for at least 10 minutes.
- Remove filets from bag and pat dry with paper towels. Sear on grill for 2 minutes per side.
- Remove filets from grill, cover with aluminum foil and allow to rest for 5 to 10 minutes before serving.
