Ingredients for 1

  • Two or three whole eggs

  • 1 tbsp sour cream

  • Salt

  • White pepper

  • Gruyere cheese

  • Pint mason jar and lid/ring

  • Butter pats and butter squares

Directions

  • Step 1

    Set your Anova Sous Vide Precision Cooker to 172ºF / 77.8ºC

  • Step 2

    Butter inside of mason jar

  • Step 3

    Crack eggs into whisking bowl

  • Step 4

    Add sour cream to bowl

  • Step 5

    Drop in a dollop of fresh cold water

  • Step 6

    Gently break up sour cream into eggs

  • Step 7

    Whisk vigorously JUST until large glycerine bubbles form and stay

  • Step 8

    Fold salt, pepper and a bit of sugar into egg mixture

  • Step 9

    Pour into greased mason jar and lightly tighten lid

  • Step 10

    Pop into water for 1/2 time

  • Step 11

    At 25 minutes remove, open, push cheese into center, re-lid and place back in bath for full time

  • Step 12

    At full time remove from water, remove from mason jar, trim crowning cheese and place on 1/4 pan & parchment.

  • Step 13

    Bake in convection/microwave hybrid at 400’ for 33 seconds, upside down

  • Step 14

    Serve upside down
