Ingredients for 1

  • Green beans

  • 1 tbsp pickling salt or Kosher salt

  • 1 tbsp sugar

  • 1 cup white vinegar

  • 1 cup water

  • 1/2 tsp red chili flakes

Directions

  • Step 1

    Set your Anova Sous Vide Precision Cooker to 140ºF / 60.0ºC

  • Step 2

    Prep green beans by cutting off ends and rinsing. Fill quart-sized (1L) mason jar with green beans packed tightly (approx. 13oz of green beans)

  • Step 3

    Combine 1 cup vinegar, 1 cup water, 1 tbsp sugar, 1 tbsp salt, and red chili flakes and stir thoroughly until salt and sugar are completely dissolved.

  • Step 4

    Fill jar with pickling solution, place on lid and tighten until only finger tight (do not tighten too much or this will cause not enough air to escape and will not seal properly)

  • Step 5

    Place jar in sous vide at 140ºF for 2.5 hours.

  • Step 6

    After 2.5 hours, carefully (super hot!) remove jars from sous vide and let cool at room temperature overnight. Pickled beans are ready to eat the next day, but the longer they sit, the more pickled they will get! Sealed jars can be stored at room temp. Optionally, refrigerate beans before eating. Note: jars could take up to 24 hours to seal properly.
