  • Elk steak

  • Salt

  • Pepper

  • Rosemary

  • Thyme

Directions

  • Step 1

    Season steaks with salt and pepper

  • Step 2

    (Optional) place steaks on smoker for 2 hours for smoke

  • Step 3

    Seal steaks with rosemary and thyme immediately after removing from smoker

  • Step 4

    Place in sous vide for 2 hours at 125 (or desired temperature)

  • Step 5

    Sear with a cast iron

  • Step 6

    Rest for 15 minutes

  • Step 7

    Slice and enjoy
