- Elk steak
- Salt
- Pepper
- Rosemary
- Thyme
Directions
- Season steaks with salt and pepper
- (Optional) place steaks on smoker for 2 hours for smoke
- Seal steaks with rosemary and thyme immediately after removing from smoker
- Place in sous vide for 2 hours at 125 (or desired temperature)
- Sear with a cast iron
- Rest for 15 minutes
- Slice and enjoy
