  1. Season steaks with salt and pepper
  2. (Optional) place steaks on smoker for 2 hours for smoke
  3. Seal steaks with rosemary and thyme immediately after removing from smoker
  4. Place in sous vide for 2 hours at 125 (or desired temperature)
  5. Sear with a cast iron
  6. Rest for 15 minutes
  7. Slice and enjoy
