Ingredients for 6

  • Elk sirloin steaks 1,2 kg / 2,4 lb

  • One small shallots, garlic, rosemary, salt, pepper, soy sauce and red wine for the marinade

  • Green beans, anjovis and garlic

  • Garlic potato gratin

Directions

  • Step 1

    Set your Anova Sous Vide Precision Cooker to 56ºC / 132.8ºF

  • Step 2

    Season steaks with shallots, garlic, rosemary, salt, pepper, soy sauce and red wine. Marinate app. two hours or so... Remember to turn the meat a few times.

  • Step 3

    Seal steaks in vacuum bag. Place in water bath and cook for 2 hours.

  • Step 4

    Remove steaks from bags and pat dry. Re-season if necessary. Fry all sides on a hot pan, take out and put it inside folio for a while.

  • Step 5

    Serve together with red wine sauce, garlic potatoes, beans and with a nice bottle of red wine ;-)
