Ingredients
- Elk sirloin steaks 1,2 kg / 2,4 lb
- One small shallots, garlic, rosemary, salt, pepper, soy sauce and red wine for the marinade
- Green beans, anjovis and garlic
- Garlic potato gratin
Directions
- Set your Anova Sous Vide Precision Cooker to 56ºC / 132.8ºF
- Season steaks with shallots, garlic, rosemary, salt, pepper, soy sauce and red wine. Marinate app. two hours or so... Remember to turn the meat a few times.
- Seal steaks in vacuum bag. Place in water bath and cook for 2 hours.
- Remove steaks from bags and pat dry. Re-season if necessary. Fry all sides on a hot pan, take out and put it inside folio for a while.
- Serve together with red wine sauce, garlic potatoes, beans and with a nice bottle of red wine ;-)
