Ingredients for 11
12 eggs
2 ounces Half and Half
4 ounces cottage cheese
1 ounce shredded mozzarella
1 ounce shredded cheddar
Diced ham or other proteins such as bacon
One shallot
Chives
Salt
Directions

Step 1
Mix together eggs, half-and-half, and cottage cheese and blend together until creamy.

Sauté the shallot. Or if using chives, omit the shallot

Spray the mason jar with a nonstick spray such as Pam.

Add salt to the dry ingredients.

Add diced ham, shredded mozzarella and cheddar mix and shallots to the mason jar.

Cover with egg mixture and secure with the lid. Make sure the lid is only finger tight to allow for air escape.

Place in preheated bath at 172 degrees for 55 minutes.

Remove from the mason jar by gently tracing the edge with a knife.

Consider topping with cheese prior to browning.

Top with shredded cheese and sprinkle with smoked paprika. Then place under the broiler for 1-2 minutes. Keep an eye on it to prevent burning.

Top with freshly trapped chives.

A recommendation given to me was to finish with a sauce similar to that of the mushroom cream-based sauce found on Chefsteps.
