Ingredients
- 12 eggs
- 2 ounces Half and Half
- 4 ounces cottage cheese
- 1 ounce shredded mozzarella
- 1 ounce shredded cheddar
- Diced ham or other proteins such as bacon
- One shallot
- Chives
- Salt
Directions
- Mix together eggs, half-and-half, and cottage cheese and blend together until creamy.
- Sauté the shallot. Or if using chives, omit the shallot
- Spray the mason jar with a nonstick spray such as Pam.
- Add salt to the dry ingredients.
- Add diced ham, shredded mozzarella and cheddar mix and shallots to the mason jar.
- Cover with egg mixture and secure with the lid. Make sure the lid is only finger tight to allow for air escape.
- Place in preheated bath at 172 degrees for 55 minutes.
Finishing Steps
- Remove from the mason jar by gently tracing the edge with a knife.
- Consider topping with cheese prior to browning.
- Top with shredded cheese and sprinkle with smoked paprika. Then place under the broiler for 1-2 minutes. Keep an eye on it to prevent burning.
- Top with freshly trapped chives.
- A recommendation given to me was to finish with a sauce similar to that of the mushroom cream-based sauce found on Chefsteps.
