Ingredients for 10
9 eggs
1/2 cup nonfat ricotta cheese
3/4 shredded cheese (eg Swiss gruyere blend)
1/2 tsp salt
1/4 tsp pepper
3oz ham, chopped
1.5oz kale, chopped
1 small can mushrooms, chopped
1/4 C. Green onions, sliced thinly

Step 1
Blend the eggs, cheeses, salt, and pepper in a blender and divide the mixture evenly between (10) 4oz sous vide-safe containers (e.g. mason jars).

Step 2
Divide the remaining ingredients between the containers and press down into the mixture before sealing. If using mason jars take care not to over-tighten. Sous vide at 172 for 1 hr.

Alternative flavor combo: Omit ham, mushrooms, Swiss/gruyere Add: 1 jalapeño, chopped, deveined and seeds removed for a mild flavor 3 slices of bacon, cooked and chopped (recommend uncured/no sugar added) 3/4 shredded cheddar (recommend 50/50 mix of regular and lite cheddar)
