Ingredients
- 9 eggs
- 1/2 cup nonfat ricotta cheese
- 3/4 shredded cheese (eg Swiss gruyere blend)
- 1/2 tsp salt
- 1/4 tsp pepper
- 3oz ham, chopped
- 1.5oz kale, chopped
- 1 small can mushrooms, chopped
- 1/4 C. Green onions, sliced thinly
Directions
- Blend the eggs, cheeses, salt, and pepper in a blender and divide the mixture evenly between (10) 4oz sous vide-safe containers (e.g. mason jars).
- Divide the remaining ingredients between the containers and press down into the mixture before sealing. If using mason jars take care not to over-tighten. Sous vide at 172 for 1 hr.
- Alternative flavor combo:
Omit ham, mushrooms, Swiss/gruyere
Add:
1 jalapeƱo, chopped, deveined and seeds removed for a mild flavor
3 slices of bacon, cooked and chopped (recommend uncured/no sugar added)
3/4 shredded cheddar (recommend 50/50 mix of regular and lite cheddar)
