300g Demerara Sugar
18g Gum Arabic
150g Water
Directions

Step 1
Combine sugar and gum Arabic in a blender and blend for 30 seconds.

While continuing to run the blender, slowly add water and run until all ingredients are dissolved, around 2 minutes.

Pour into vacuum bag, remove as much air as possible, taking care not to allow the mixture to escape the bag into the sealer.

Step 4
Once the water is at temperature (145°F/62.8°C), insert the bag into the water and cook for 2 hours.

Finishing Steps

Once cooked, place bag in an ice bath and allow to come to room temperature. Transfer to a bottle or container and refrigerate until needed, up to 2 weeks.
