Demerara Gum Syrup
This syrup is an essential component for excellent, well balanced cocktails. It can be used wherever a cocktail calls for a 2:1 simple syrup (also called a rich or rock candy simple syrup) and works best with aged spirits such as bourbon or dark rum.

Ingredients
- 300g Demerara Sugar
- 18g Gum Arabic
- 150g Water
Directions
- Combine sugar and gum Arabic in a blender and blend for 30 seconds.
- While continuing to run the blender, slowly add water and run until all ingredients are dissolved, around 2 minutes.
- Pour into vacuum bag, remove as much air as possible, taking care not to allow the mixture to escape the bag into the sealer.
- Once the water is at temperature (145°F/62.8°C), insert the bag into the water and cook for 2 hours.
Finishing Steps
- Once cooked, place bag in an ice bath and allow to come to room temperature. Transfer to a bottle or container and refrigerate until needed, up to 2 weeks.
