Now with my new Anova that i gave my wife for Christmas, anything and everything!! Just getting revved up with this thing and i can now challenge my wife’s cooking... until she realizes what’s going on then I’m screwed once she takes it away from me!!

Ingredients for 4
3 lb cross cut roast
Salt n Pepper
Steak spice
Minced garlic
Fresk Rosemary
Butter
Olive oil
Directions

Step 1
Set your Anova Sous Vide Precision Cooker to 130.0ºF / 54.4ºC.

Step 2
Rub in salt, pepper, steak spice, garlic all over the roast

Place roast in zip lock bag then add 1 tbsp butter, 2 sprigs of rosemary, 2 tbsp olive oil

Step 4
Insert bag in water bath to remove all air and seal

Step 5
After 16 hrs increase temperature to 132

Step 6
After 20 hrs increase temperature to 135

Step 7
After 22 hrs remove bag from water, remove roast from bag and pat dry all around

Step 8
Heat 2-3 tbsp of oil on high until oil starts to smoke

Step 9
Sear roast on all sides 1-2 minutes per side

Step 10
Rest for 10 min

Step 11
Slice and serve
