Cross Cut Roast (also Called Cross Rib Roast)

Now with my new Anova that i gave my wife for Christmas, anything and everything!! Just getting revved up with this thing and i can now challenge my wife’s cooking... until she realizes what’s going on then I’m screwed once she takes it away from me!!

Ingredients
- 3 lb cross cut roast
- Salt n Pepper
- Steak spice
- Minced garlic
- Fresk Rosemary
- Butter
- Olive oil
Directions
- Set your Anova Sous Vide Precision Cooker to 130.0ºF / 54.4ºC.
- Rub in salt, pepper, steak spice, garlic all over the roast
- Place roast in zip lock bag then add 1 tbsp butter, 2 sprigs of rosemary, 2 tbsp olive oil
- Insert bag in water bath to remove all air and seal
- After 16 hrs increase temperature to 132
- After 20 hrs increase temperature to 135
- After 22 hrs remove bag from water, remove roast from bag and pat dry all around
- Heat 2-3 tbsp of oil on high until oil starts to smoke
- Sear roast on all sides 1-2 minutes per side
- Rest for 10 min
- Slice and serve
