Now with my new Anova that i gave my wife for Christmas, anything and everything!! Just getting revved up with this thing and i can now challenge my wife’s cooking... until she realizes what’s going on then I’m screwed once she takes it away from me!!

Temperature : 130F / 54.4C

  1. Set your Anova Sous Vide Precision Cooker to 130.0ºF / 54.4ºC.
  2. Rub in salt, pepper, steak spice, garlic all over the roast
  3. Place roast in zip lock bag then add 1 tbsp butter, 2 sprigs of rosemary, 2 tbsp olive oil
  4. Insert bag in water bath to remove all air and seal
  5. After 16 hrs increase temperature to 132
  6. After 20 hrs increase temperature to 135
  7. After 22 hrs remove bag from water, remove roast from bag and pat dry all around
  8. Heat 2-3 tbsp of oil on high until oil starts to smoke
  9. Sear roast on all sides 1-2 minutes per side
  10. Rest for 10 min
  11. Slice and serve
