Ingredients for 4

  • Cowboy steak, 2 in. thick

  • Salt

  • Pepper

  • Onion powder

  • Garlic powder

  • Olive oil

  • Butter

Directions

  • Step 1

    Liberally season steak with salt, pepper and spices on all sides.

  • Step 2

    Vacuum seal steak. Add aromatics like rosemary to the bag, if desired.

  • Step 3

    Cook at 129 degrees for 2 hours.

      Remove steak from bag. Rest on paper towels to dry one side. Pat other side dry with paper towels.

    • Step 1

      Preheat cast iron pan with 2 Tbsp olive oil over medium high heat until oil smokes.

    • Step 2

      Sear steak for 30 seconds each side. After one minute on each side, add 1 Tbsp butter to the pan and sear for an additional 30 seconds on each side. Use grill press to get a even sear.

    • Step 3

      Use tongs to sear the sides of the steak.

    • Step 4

      Remove steak from pan. Rest on cutting board for 10 minutes.

    • Step 5

      Slice steak to serve.
