  1. Liberally season steak with salt, pepper and spices on all sides.
  2. Vacuum seal steak. Add aromatics like rosemary to the bag, if desired.
  3. Cook at 129 degrees for 2 hours.

Finishing Steps

  1. Remove steak from bag. Rest on paper towels to dry one side. Pat other side dry with paper towels.
  2. Preheat cast iron pan with 2 Tbsp olive oil over medium high heat until oil smokes.
  3. Sear steak for 30 seconds each side. After one minute on each side, add 1 Tbsp butter to the pan and sear for an additional 30 seconds on each side. Use grill press to get a even sear.
  4. Use tongs to sear the sides of the steak.
  5. Remove steak from pan. Rest on cutting board for 10 minutes.
  6. Slice steak to serve.
