Ingredients
- Cowboy steak, 2 in. thick
- Salt
- Pepper
- Onion powder
- Garlic powder
- Olive oil
- Butter
Directions
- Liberally season steak with salt, pepper and spices on all sides.
- Vacuum seal steak. Add aromatics like rosemary to the bag, if desired.
- Cook at 129 degrees for 2 hours.
Finishing Steps
- Remove steak from bag. Rest on paper towels to dry one side. Pat other side dry with paper towels.
- Preheat cast iron pan with 2 Tbsp olive oil over medium high heat until oil smokes.
- Sear steak for 30 seconds each side. After one minute on each side, add 1 Tbsp butter to the pan and sear for an additional 30 seconds on each side.
Use grill press to get a even sear.
- Use tongs to sear the sides of the steak.
- Remove steak from pan. Rest on cutting board for 10 minutes.
- Slice steak to serve.
