Ingredients for 4

  • Salt and Pepper

  • 2 game hens, frozen

  • 6 sprigs fresh rosemary

  • Lemon slices

  • 1/4 cup Sherry

  • 1/4 cup soy sauce

  • 4-5 cloves garlic, diced

  • Italian seasoning to taste

Directions

  • Step 1

    Wash hens and sprinkle liberally with salt and pepper

  • Step 2

    Place hens in bag with two sprigs of rosemary on each breast and one sprig on back. Add slice of lemon to each location.

  • Step 3

    Add Sherry, soy sauce, garlic, and seasoning to bag and vacuum seal.

  • Step 4

    Place bag in bath.

      Preheat oven to 450°

    • Step 1

      Remove hens from bag and pat dry

    • Step 2

      Season with garlic and herb seasoning; add a bit of oil to improve adhesion of spices

    • Step 3

      Roast breast side up for 30 minutes at 450°. If hens are added 350°+, increase roasting time by 10 minutes.

    • Step 4

      Remove from oven and tent with foil to rest for 5 to 10 minutes.

    • Step 5

      Cut hens in half and serve.
