Ingredients

Directions

  1. Wash hens and sprinkle liberally with salt and pepper
  2. Place hens in bag with two sprigs of rosemary on each breast and one sprig on back. Add slice of lemon to each location.
  3. Add Sherry, soy sauce, garlic, and seasoning to bag and vacuum seal.
  4. Place bag in bath.

Finishing Steps

  1. Preheat oven to 450°
  2. Remove hens from bag and pat dry
  3. Season with garlic and herb seasoning; add a bit of oil to improve adhesion of spices
  4. Roast breast side up for 30 minutes at 450°. If hens are added 350°+, increase roasting time by 10 minutes.
  5. Remove from oven and tent with foil to rest for 5 to 10 minutes.
  6. Cut hens in half and serve.
