Ingredients
- Salt and Pepper
- 2 game hens, frozen
- 6 sprigs fresh rosemary
- Lemon slices
- 1/4 cup Sherry
- 1/4 cup soy sauce
- 4-5 cloves garlic, diced
- Italian seasoning to taste
Directions
- Wash hens and sprinkle liberally with salt and pepper
- Place hens in bag with two sprigs of rosemary on each breast and one sprig on back. Add slice of lemon to each location.
- Add Sherry, soy sauce, garlic, and seasoning to bag and vacuum seal.
- Place bag in bath.
Finishing Steps
- Preheat oven to 450°
- Remove hens from bag and pat dry
- Season with garlic and herb seasoning; add a bit of oil to improve adhesion of spices
- Roast breast side up for 30 minutes at 450°. If hens are added 350°+, increase roasting time by 10 minutes.
- Remove from oven and tent with foil to rest for 5 to 10 minutes.
- Cut hens in half and serve.
