Ingredients for 4

  • 3.5 lbs Top round roast

  • 1 tbsp coffee

  • 1 tbsp chili powder

  • 1 tbsp paprika

  • 1 tbsp brown sugar

  • 3 tbsp salt

  • 1 tsp black pepper

  • 2 tsp onion powder

Directions

  • Step 1

    Set your Anova Sous Vide Precision Cooker to 132.0ºF / 55.6ºC.

  • Step 2

    Combine all rub ingredients and pat onto all sides of roast

  • Step 3

    Place in gallon bag using submerge displacement method or vacuum seal and bathe for 24 hours

    • Step 1

      Heat 2 tablespoons of oil or ghee in cast iron skillet on high and brown on all sides.

    • Step 2

      Let rest 15 minutes, then slice thin against the grain.

    • Step 3

      Serve
