Coffee Rubbed Roast

Ingredients
		- 3.5 lbs Top round roast 
 
		- 1 tbsp coffee
 
		- 1 tbsp chili powder
 
		- 1 tbsp paprika
 
		- 1 tbsp brown sugar
 
		- 3 tbsp salt
 
		- 1 tsp black pepper
 
		- 2 tsp onion powder
 
	
Directions
		- Set your Anova Sous Vide Precision Cooker to 132.0ºF / 55.6ºC.
 
		- Combine all rub ingredients and pat onto all sides of roast
 
		- Place in gallon bag using submerge displacement method or vacuum seal and bathe for 24 hours
 
	
				- Heat 2 tablespoons of oil or ghee in cast iron skillet on high and brown on all sides. 
 
					- Let rest 15 minutes, then slice thin against the grain. 
 
					- Serve
