  1. Set your Anova Sous Vide Precision Cooker to 132.0ºF / 55.6ºC.
  2. Combine all rub ingredients and pat onto all sides of roast
  3. Place in gallon bag using submerge displacement method or vacuum seal and bathe for 24 hours

  1. Heat 2 tablespoons of oil or ghee in cast iron skillet on high and brown on all sides.
  2. Let rest 15 minutes, then slice thin against the grain.
  3. Serve
