2 8 oz (ish) chuck eye steaks
Butter
Rosemary
Thyme
Garlic
Salt
Pepper
Directions

Step 1
Remove steaks from refrigerator and let come to room temp.

Set sous vide for 136 degrees.

Season with salt and pepper. Let stand for 30-45 min

Lightly pat steaks dry then vacuum seal with aromatics. I choose a spring of rosemary, a sprig if thyme, and a crushed garlic clove.

Sous vide at 136 degrees for 90 minutes

Step 0
Sear steaks in 450 degree cast iron pan for one minute per side. Baste in butter from pan.

Let rest for 5 minutes. Serve and enjoy.
