Ingredients for 3
½ c + 2 Tbsp dark chocolate
⅛ tsp salt
5 egg yolks
1 c Heavy Whipping Cream
½ tsp Vanilla Bean Paste
Directions

Step 1
Heat cream in the microwave (do not boil!)

Step 2
Mix in chocolate (broken up or use chips).

Step 3
Stir until the chocolate is melted and well incorporated and smooth.

Add all other ingredients (egg yolks one at a time).

Mix until smooth and silky. There should be no lumps.

Put in 3 - 8oz jars

Step 7
Put in sous vide at 176°F for 1 hour.

Step 8
Chill completely and serve with whipped cream or berries.
