Chocolate Pot de Creme
At room temperature, this recipe is rich and delicious! Smooth and creamy, the dark chocolate silkiness can be served by itself or with whipped cream, berries, or even nuts. If you chill it completely in the refrigerator before serving, it will thicken up like a flourless chocolate cake.

Ingredients
- ½ c + 2 Tbsp dark chocolate
- ⅛ tsp salt
- 5 egg yolks
- 1 c Heavy Whipping Cream
- ½ tsp Vanilla Bean Paste
Directions
- Heat cream in the microwave (do not boil!)
- Mix in chocolate (broken up or use chips).
- Stir until the chocolate is melted and well incorporated and smooth.
- Add all other ingredients (egg yolks one at a time).
- Mix until smooth and silky. There should be no lumps.
- Put in 3 - 8oz jars
- Put in sous vide at 176°F for 1 hour.
- Chill completely and serve with whipped cream or berries.
